5 Delicious Ice Cream Recipes

Strawberry Ice Cream
Mash together half a pound of fresh strawberries and 2 ounces of sugar, and set aside. In a saucepan, combine 3 beaten egg yolks, 1/2 pint whole milk, a speck of salt, and 2 ounces of sugar, and heat to just below a boil over medium heat, stirring continuously. Cool and place in the refrigerator for 3 hours, stirring occasionally. Stir in 1/2 pint of heavy cream, 1 teaspoon of pure vanilla, and the strawberry mixture. Transfer to your electric ice cream maker and follow the manufacturer's instructions.

Butter Pecan Ice Cream
Melt 1/4 cup of butter in a pan and add 4 ounces of chopped pecans and 2 tablespoons of brown sugar. Stir and cook over medium heat for 3 to 4 minutes and cool completely. In a mixing bowl, combine 1/2 pint of whole milk and 1 pint of heavy cream. Blend in 1 teaspoon of natural maple flavoring and the nut mixture, stirring well. Transfer the mixture to your White Mountain ice cream maker and follow the manufacture's instructions.

Peanut Butter Ice Cream
Place 1 pint of heavy cream, 1/2 pint light cream, 3 ounces of sugar, and 3/4 cup of chunky peanut butter in a saucepan and heat over low heat, stirring continuously until peanut butter is dissolved. Remove from heat and cool. When cool, stir in 1 teaspoon pure vanilla, transfer to your Cuisinart ice cream maker, and follow the manufacturer's instructions. (4 ounces of semi-sweet chocolate chips can also be added.)

Non-Dairy Vanilla Ice Cream
Dissolve 2 teaspoons of gelatin in 1/2 cup of pure apple juice for about 15 minutes, stirring occasionally. In a medium saucepan, combine 1/4 cup of honey and 2 cups of vanilla soy milk; heat to just below boiling, stirring continuously. Remove from heat and add gelatin mixture, and stir until dissolved. Add 1 cup of vanilla soymilk and 2 teaspoons of pure vanilla extract. Cover and cool completely; refrigerate for 3 hours, stirring occasionally. Transfer the mixture to your ice cream maker and follow the manufacturer's instructions.

Sugar-Free Ice Cream
Combine 2 teaspoons of gelatin and 1/2 cup of low-fat milk in a saucepan; stir and heat until dissolved. Remove from heat and stir in 3-4 teaspoons of non-sugar sweetener and cool. Place 1 cup of milk, 2 tablespoons of nonfat dry milk, a speck of salt, 1 teaspoon of pure vanilla, and 1 1/2 cups of buttermilk in a blender. Add gelatin mixture and mix thoroughly. (Sugar-free chocolate mix can replace vanilla to make chocolate ice cream.) Refrigerate for 3 hours, stirring occasionally. Transfer the mixture to your commercial ice cream maker and follow the manufacturer's instructions.
